The secret to the best tomato soup is: keep it simple. Tomato soup is a classic dish. There are thousands of variations on this dish, but the perfect tomato soup is actually very easy. There is really no need to add numerous spices, there is already enough flavor in the tomatoes. So you don’t need anything special. You get that great taste by choosing the best ingredients.
- 750 g Roma tomatoes
- 1 small can of tomato paste
- 1 onion
- 2 cloves of garlic
- 1 vegetable stock cube
- olive oil
- 750 ml water
- cooking cream
- fresh basil
How to make it
As we said, step one is choosing the best ingredients. Expensive is not necessarily better in this regard but fresh is.
Chop an onion and finely chop the garlic. Cut the tomatoes in half and remove the seeds with your hands. It is a bit of work, but it tastes better. Cut the rest into chunks.
Put a soup pan on medium heat and add a good layer of olive oil. Fry the onion and garlic for about three minutes. Keep stirring well. Then add the tomato pieces and fry for five minutes.
Then add the water and vegetable stock. Stir in the tomato puree and let it cook for a few minutes.
Take the hand blender and puree everything. Then let it cook a little more. Season the soup with a little salt or pepper.
Tip: if you like, you can add a little cooking cream or a generous knob of butter. This will make the soup a little fuller.
